Tomato Soup and Grilled Cheese Recipe
As classic a combo as you can get. No fusions. Just bold flavours. A while back when I first started I made a Tomato soup that ended up being more of a Hot Sauce. I’ve paired back a bit to create a homage to something truly wonderful. I know I’m doing a lot of Soups, but as the Starks say “The North Reme-“, I mean. “Winter is coming”. And you’ll need all the cheat day comfort food you can get your hands on. It''s also a great reminder of life on Camp.
Ingredients
½ cup Grated Cheddar
2 tsp Chilli Flakes
1 Chilli (Diced and Deseeded)
1 Can Chopped Tomatoes
75 g Mozzarella
1 tsp Dried Oregano
1 Vegetable Stock Cube
1 tsp Dried Basil
2 Slices Crusty Brown Bread
1 Red Onion (Diced)
1 tsp Paprika
1 tbsp Apple Cider Vinegar
3 Cloves Garlic (Diced)
10g of Butter
Step 1
Prep!
Start by prepping your Veg. Add to a pan over a high heat with a shot of Oil and fry off. Season with Salt and Pepper.
Step 2
Make Soup!
Add your Tomatoes, Stock Cube, Herbs, Spices (only adding 1 tsp of Cayenne, and none of the Nutmeg), Vinegar, and 2 Cans worth of Hot Water (just fill the empty Tomato Cans). Leave to simmer while you prep your grilled cheese.
Step 3
Prep Your Grilled Cheese!
Prep your Grilled Cheese by buttering both sides of your Bread. Layer on your Cheese, Ham, and Mozzarella.
Step 4
Grill!
Add your Grilled Cheese to a Hot Pan over a Medium Heat and cover to help the Cheese Melt. Flip after 3-5 minutes. To cook the other side.
Step 5
Serve!
Serve when your Grilled Cheese is at the Appropriate Crispiness for your Tastes with a Big Bowl of your Soup and enjoy. Classic comfort food. At its finest. Give it a go and let me know how you get on.
